Figure Friendly Chicken Stew with Corn and Limas

Hi Bellas , here is a recipe I use every winter. This stew is absolutely delicious and figure friendly The picture is directly from the book I use. I will take live pics of the next one I make.

4 Servings
Prep Time:25 minutes
Cooking Time:1hour

4 whole chicken legs, split into drumsticks and thighs
1/4 cup of flour
a large onion, thinly sliced
1lb red skinned potatoes cut into 1/4 inch thick slices
3/4 cup chicken broth
1 can stewed tomatoes, chopped with the juice
1 cup thawed frozen lima beans
1 cup thawed frozen corn

Preheat oven to 350 degrees F
Dredge chicken in flour, shake off excess. saute chicken with olive oil until golden brown
transfer chicken to a plate
add onion to the same oil used for the chicken and stir frequently. Add broth, stewed tomatoes, lima beans, salt and  sauted chicken. Bring to a boil. Cover, place in oven and bak for 45 minutes
On stovetop, stir in corn, and cook over medium heat for 3 minutes
